Quince candies - Caramelle di mela cotogna – Bomboni od dunja

Almost one month passed from the first (and hopefully the last!) this year snowfall. And it arrived silent, there is always the same perception of stillness and calm when it comes to snow. The snow continued to fall all night long and it was impetuous and so powerful and the signs of ruin appeared in the morning under the thick white cover. Tree branches were too weak to bear heavy weight of wet snow and collapsed, whole trees collapsed. A sad view of disaster remained all around for days. And then the snow started to disappear and the sound of the chainsaw arrived. We will miss our beautiful weeping willow and the pine in our garden. Just two miserable logs and many twigs and pine needles still lie on the moss-covered soil. I’ve picked up from the ground some pine branches and pine cones and took some pictures with the last quince candies that I forgot to have in a jar from last November. The combination of two fragrances is pleasant: smell of resin and light cinnamon perfume of dried quince go together surprisingly well. Today  I offer you the beauty from the waste.





QUINCE CANDIES


370 gr of fruit pulp (got from 2 big fruits after making quince jelly)
150 – 200 gr of sugar + to cover the candies

lemon juice of 2 lemons



Make the purée from the pulp, add sugar and lemon juice and cook 1 hour on medium heat until the mixture becomes very dense. Stir continuously to avoid that the mixture sticks to the bottom of the pot.

Cover the tray with baking paper, pour the mixture on the tray and flatten it with the palette knife. Cover with another sheet of baking paper and allow to dry in a warm place. It will take 15 days for the mixture to get dry (turn the mixture upside down every day) and cut the mixture with the sharp knife or with pizza-cutter into cubes. You can use cookie cutters too, you will get nice shapes, but also a lot of scrap. Cover the candies with the sugar. Store in a jar.

CARAMELLE DI MELA COTOGNA

370 gr di polpa di frutta (di 2 frutti grossi, ottenuta dalla preparazione della gelatina di cotogna)
150 – 200 gr di zucchero + per rivestire le caramelle
succo di 2 limoni

Passare la polpa di frutta con il passaverdura fino ad ottenere la purea, aggiungere lo zucchero e il succo di limone e far cuocere a fuoco medio per un ora finché il composto diventerà molto denso. Mescolare in continuazione per evitare che il composto si attacchi al fondo del recipiente.
Rivestire un recipiente con la carta forno, versarci il composto e livellarlo con la spatola. Coprire il composto con un foglio di carta forno e farlo asciugare in un posto caldo. Ci vorranno circa 15 giorni per asciugare bene il composto (girare il composto ogni giorno). Tagliare il composto a cubetti con il coltello affilato o con la ruota per tagliare la pizza, oppure usare i tagliabiscotti. In questo modo si otterranno le forme più belle, ma anche molto scarto. Rivestire le caramelle con lo zucchero. Conservarle nel vaso di vetro.

BOMBONI OD DUNJA

370 gr mesa od voćki (meso od 2 velike voćke koje je ostalo od pripreme želea od dunja)
150 – 200 gr šećera+ za umakanje bombona
sok od 2 limuna

Propasirati meso voćki da se dobije pire, dodati mu šećer i sok od limuna, te kuhati na srednjoj vatri oko jedan sat da se masa dobro sgusne. Stalno miješati da se masa ne prilijepi za dno posude za kuhanje.
Prekriti pladanj masnim papirom za pečenje, izliti masu i izravnati ju špatulom. Porkiti masu listom masnog papira za pečenje i ostaviti da se suši na toplom mjestu. Trebat će 15 dana da se masa dobro osuši (svaki dan masu okrenuti). Narezati masu oštrim nožem ili rezačem za pizzu na kocke ili ih rezati kalupima za kekse. Na taj će način bomboni imati ljepši oblik, ali će se dobiti više škarta. Umakati bombone u šećer. Čuvati u staklenkama.
